All of these recipes can be altered to your nutritional needs.

Breakfast

Açaí bowl

  • 1 frozen banana

  • 1 handful frozen berries of your choice

  • 1 tbsp of açaí concentrate

  • ⅓-⅔ dairy free milk of your choice

  • ½ cup of granola

  • 1 tbsp of coconut flakes to garnish

Instructions

  1. Add a frozen banana, fruit, açaí concentrate, and non dairy milk into a blender

  2. Blend until smooth and pour into bowl

  3. Top with granola and coconut flakes and enjoy!

Lunch

White bean dip with herbs

  • ¼ cup olive oil

  • 3 large diced garlic cloves

  • 1 tbsp fresh thyme finely chopped

  • 1 tbsp fresh rosemary finely chopped

  • 2 cans cannellini beans

  • 2 tbsp vinegar                                                       

  • Salt and pepper

  • Pine nuts, thyme, and red pepper flakes for garnish

Instructions

  1. Heat olive oil in pan and add garlic, thyme, and rosemary and saute for 2-3 minutes

  2. Add beans, olive oil, herbs, vinegar, and salt and pepper to food processor (blend till smooth)

  3. Pour into bowl and place into the fridge and enjoy with pita bread and fresh veggies and enjoy!

Dinner

Black bean wrap

  • 1 large tortilla

  • ⅓ cup salsa

  • ⅓ cup black beans          

  • ¼ cup organic corn                   

  • ¼ avocado chopped

  • 1 tbsp black olives sliced

  • 1 cup baby green

  • 2 sprigs cilantro

Instructions

  1. Warm tortilla in microwave for about 30 seconds    

  2. Pour salsa on tortilla and spread black beans, corn, avocado, and olives over salsa

  3. Top with baby greens and cilantro

  4. Fold side edges of wrap over ingredients

  5. Slice wrap in half and enjoy!
